Pizza for breakfast anyone?
This amazing recipe we tried from Eatingwell only takes 10 minutes to make, and it may be breakfast specific, but of course you can enjoy it at anytime of the day.
So crack an egg, if you’d like and get creative. Pile on the veggies and herbs of your choosing, and remember to be a little generous with the cheese, you deserve it!

- 1 whole-wheat naan
- 2 tablespoons part-skim ricotta cheese
- 1 tablespoon low-sodium marinara or pesto
- ½ teaspoon lemon zest
- 1 large egg
- 1 tablespoon grated Parmesan cheese
- Chopped fresh basil and ground pepper for garnish

- Step 1Preheat oven to 425°F. Coat a rimmed baking sheet with cooking spray.
- Step 2Place naan on the prepared pan. Mix ricotta, marinara (or pesto) and lemon zest in a small bowl. Spread the mixture onto the naan, creating a well in the center. Carefully crack egg into the well. Sprinkle with Parmesan. Bake until the naan is golden, the egg white is set and the cheese is melted, 8 to 10 minutes. Garnish with basil and pepper, if desired.
